Halcyon - Brandy barrel flanders red [8.2% ABV]
In 2019 Wilderness brewed a big batch of flemish style red-brown ale and aged
it in ex pinot barrels. For this beer they selected one barrel with a
nice fruit expression (from the initial mixed fermentation). Then
transferred the beer into a freshly emptied ex brandy barrel loaded up
with 200g/L local plums. Oli and Hannah let this age for a further 18 months before
packaging. The result has a pronounced brandy character, balanced
acidity and complex fruit notes.
